cheese-pecan crackers
this recipe was taken from good ol’ martha but they have been a success in our house. we run away from blue cheese and gorgonzola-like-cheeses – so we substitute the Danish blue cheese with some cheddar or gouda. we have tried different combinations such as:

gruyère and thyme

cheddar and cayenne pepper

gouda and jalapeños
aubergine rolls
cut 1 large peeled aubergine/eggplant lengthways into thin slices and sprinkle with salt. place in bowl with water for some 15 minutes. rinse and dry well. panfry the rinsed aubergine slices in olive oil, until golden brown on both sides. Drain and cool. lay aubergine slices out flat, add chopped fresh parsley, crumbled goat cheese (or feta), thinly slice tomatoes and roll up. place on a platter and serve cold.
